Iago's Wine

A real jewel of Imereti, Iago Bitarishvili comes from a family of winemakers and is the first in Georgia whose vineyards are officially organically certified. Owner of two hectares of 60-year-old Chinuri vines, Iago produces all his wine in Qvevri (hand-made amphorae buried in the ground), without the use of any chemicals or additives, either in the vineyards or in the vinification. True to family tradition, he began bottling his wines in 2003, determined to make wine in the traditional way for the Mtskheta region and Georgia in general - in qvevri. Chinuri is the grape he uses for his wine, a local indigenous Georgian variety named for its ripe, oily green color. Iago firmly believes that Chinuri is one of the best wine grapes in the world. He produces only 5,000 bottles a year, some of which are available in top restaurants (London’s Ritz is one of the last to succumb to this magic) and in natural wine bars in London or Paris.
