Usually Chateau Pavie is one of the last to harvest in the Saint Emilion area to ensure full grain ripeness. Here 70% of the vineyards are viewed in an organic way and the goal is to reach 100%. In 1954 he received the Premier Grand Cru Classe (B), and in 2012 the Classe (A) thanks to the investment and dedication of the current owner Gerard Perse. Wine making begins with the extremely detailed selection of the grapes - from the vine itself, where part of the harvest is sacrificed for the optimal development of the rest, goes through optical control and reaches the oak vessels, where gravity squeezes the juice from the berries. The wine is so rich in color that for some years it is completely opaque, and the experience is deep and multi-layered - qualities worthy of the best wines in the world.
