Pinot Noir L'Amphithéâtre 2021 - organic viticulture with biodynamic practices.
The wine is aged for 18 months in a Burgundy barrel (228 l - second fill) and a ceramic amphora. Pinot Noir with a beautiful ruby colour. Intriguing expressive nose with hints of dried fruit and earthy nuances. The body is smooth and fresh with well-balanced acidity and a pleasing finish. Pairs well with rosemary lamb, roast duck and mushroom risotto.

Великолепен тероар Тероарът е онова уникално съчетание на природни дадености с човешки действия, което обуславя качеството на реколтата. Жива и понякога крехка композиция от постоянни фактори (терен), променливи величини (климат) и умелото направляване на природните процеси. Почвата в лозето на Clos Bibliothèque е бедна и варовикова, осеяна с морски фосили на милиони години. Лишени от охолство, лозите впиват корени дълбоко в нея и усвояват ценните минерали, придаващи характерни нотки на виното. Теренът е с идеално източно изложение, посрещащо първите лъчи на слънцето сутрин и предпазващо лозите от прегряване след обяд, когато температурите достигат своя максимум. Разположението на лозето по средата на хълма осигурява на лозите отлични дренаж и проветряване.

Black Sea region
The Black Sea coast is an area where nearly 30% of Bulgarian vineyards are concentrated. The climate, with warm summers and mild winters, is suitable for growing white varieties. Autumn is warm and long, which favours the accumulation of enough sugars to produce fine white semi-dry wines. Over 50% of white grape varieties in Bulgaria are grown here, and the most common are Dimyat, Riesling, Uni Blanc, Muscat Ottonel, Traminer, even Sauvignon Blanc. The wines have a pleasant fruity aroma, rich taste and elegant freshness. The old endemic variety Dimyat, in addition to being suitable for dry, is often used for the production of dessert wines, as well as for fine aromatic distillates.

The wines show a specific aroma of red berries and cherry depending on the vinification method employed - from fresh red cherries in lighter wines to stewed black cherries in weightier examples, many of them also showing hints of earthy flavours.
