True to its moniker, the Wild Yeast Chardonnay is fermented using the native, wild yeasts that occur naturally on the skins of the grapes. Unwooded, it is fermented in underground cement tanks in a slow, volatile process that can take anywhere between 6 – 9 months. This method, although risky, results in incredibly expressive wine with a wisdom that is unattainable in wines made using commercial yeasts. Can be enjoyed for the next 3- 4 years.

Springfield Estate
Set in the heart of the mountain-ringed Robertson Valley in the Western Cape of South Africa, Springfield Estate is a family-run wine farm owned by ninth-generation descendants of French Huguenots, who came to South Africa from the Loire in 1688 with bundles of vines under their arms. The farm has been in the family since 1898 and today, using a combination of sometimes risky winemaking techniques, traditional methods and modern technology, along with a sense of practicality and dogged determination borne from living off the land all their lives, the Bruwer family is able to handcraft wine true to its motto: Made on Honour.

Стеленбош е най-популярният винен район в Южна Африка. Намира се само на 25 километра източно от Кейп Таун, сравнително близко до Атлантическия океан. Редуването на ветровити хълмове с по-хладен климат и защитени от ветровете по-топли долини създават микротероари с разнообразни климатични условия, които са подходящи за различни сортове и различни стилове вина. Районът притежава и уникално разнообразие от над 50 различни вида почви: гранитни и шистови най-вече на хълмистите части и песъкливо глинести в по-равнинните части и долините, като всички тези почви са много благоприятни за отглеждане на лозя и качествено узряване на гроздето, а също и предразполагат към вина с различен характер, дори и от едни и същи сортове. От по-свежи, леки и елегантни към по плътни, наситени и концентрирани вина. Климатът е сравнително топъл с много интензиво слънце до обяд, но има и хладни течения от югоизток, най-вече следобяд от близостта с Атлантическия океан. Каберне Совиньон и Шенин Блан са най-добре изявяващите се сортове от района, като Каберне Совиньонът развива очарователно землисто ухание и минерално усещане на вкус, особено от лози засадени на гранитни почви, а Шенина се получава изключително свеж, изобилен, плодово ароматен и наситен, а и е добре адаптивен, тъй като толерира сушите и горещините, характерни за летата в Стеленбош. Сира, Пти Вердо, Мерло, Шардоне, Совиньон Блан и Ризлинг също даават страхотни вина от този тероар, като специален е Пинотажът, уникален, червен сорт кръстоска между Пино Ноар и Сензо създаден в Южна Африка през 1925 година. Стеленбош е родното място на този сорт и както почвите, така и климатичните и топографски особености са много подходящи за отглеждането му.

Chardonnay
Chardonnay is the world's most famous white-wine grape and also one of the most widely planted. Of course, the most highly regarded expressions of the variety are those from Burgundy and California, but many high-quality examples are made in Italy, Australia, New Zealand and parts of South America. Describing the flavours of Chardonnay is not easy. This is not thanks to the complexity of the varietal itself but usually due its susceptibility to winemaking techniques - such as Malolactic fermentation which gives distinctive buttery aromas or Fermentation or maturation in oak barrels which contributes to the wine with smokey notes of vanilla, honey and even cinnamon, and not last the lees contact while in barrel imparts biscuity, doughy flavours. And all these incorporated with the varietal aromas of tropical (banana, pineapple and guava) to stone fruits (peach, nectarine and apricot), sometimes even citrus and apple notes. Climate plays a major role in dictating which fruit flavours a Chardonnay will have - warm regions (California, Australia ) make more tropical styles; temperate zones (southern Burgundy, New Zealand) - stone fruit notes, while the very coolest (Chablis, Champagne) lean towards green-apple aromas.
