Grapes harvested from own vineyards near Nikolaevo. Picking is done entirely by hand, and the grapes are chilled to preserve the fresh fruit notes. After transportation to the winery, the grain is also sorted. The juice and skin are in contact for about 1:30-2 hours until a gentle and delicate pink color is obtained. Fermentation takes place at a controlled temperature of 16-17 degrees. Light fresh notes of wild strawberry, pink peach and citrus.

Изба Downtown Urban Winery е създадена през 2020 година. За да осъществят своята дългогодишна мечта, София, Стефан, Николай и Веселин обединяват сили и знания и дават началото на избата, разположена в централната част на гр. Сливен – в един от старите квартали на града, запазил автентичната си архитектура. Верни на традициите при производството, създават занаятчийски вина от грозде от собствени масиви, намиращи се близо до Сливен – в землището на с. Николаево. Лозето е засадено през 2016 година. Надморската височина е 250 м. Преобладаващите почви са песъкливо-глинести. Сортовете, с които работят на този етап, са пино гри, тамянка, шардоне, совиньон блан, санджовезе – клон за розе, сира и каберне фран. Общата площ на насажденията е 200 дка. Всички операции при производството на вината се изпълняват ръчно, което определя и микро капацитетът на избата – годишно около 10-12 хил. бутилки. Концепцията на избата е да създава крафт вина, които са безкомпромисен представител на съответния сорт и отразяват в пълна степен характеристиките на района, в който се намира лозето. През дебютната 2020 година са направени изключително лимитираните 3500 бутилки общо. Всички вина са без контакт с дъбова дървесина.

Thracian valley
In this region, which includes Southern Bulgaria, the climate is temperate continental protected from northern winds thanks to Stara Planina, with good rain distribution. It includes the central parts of the Thracian lowland and parts of Sakar. Most of the red grape varieties are concentrated in this area. Mavrud, Merlot, Cabernet Sauvignon, Red Muscat, Pamid and others are grown. The climatic conditions of the region favour the production of rich, dense, memorable red wines, especially from the varieties Cabernet Sauvignon and Mavrud. Good wines from the local variety Mavrud are especially valued for their aroma and taste of small red fruits, spices and herbs.

Sangiovese
Sangiovese (or Nielluccio in Corsica), a dark-berried vine, synonymous with the red wines of Tuscany, and all the romanticism that goes with the territory. Sangiovese is the core constituent in some of the great names in Italian wine thanks to its ability to balance between its high acidity and firm tannic structure. Its characteristic flavours of dark cherries and black stone fruit are backed by secondary notes of dried tomato and herbs. The use of oak enriches the flavours toward plum and even wild raspberry. In Tuscany, Sangiovese is the sole grape variety permitted in the prestigious Brunello di Montalcino DOCG and provides the backbone to Vino Nobile di Montepulciano and the popular wines of Chianti.
