The grapes for this particular wine are picked earlier, when the sugar content is lower. Through classic white wine production technology, we obtain fresh, low-alcohol Champagne wine material. Secondary fermentation is carried out using the 'Charmat' method in inox pressure vessels/acratophores, with the addition of circulation liqueur and yeast. This process converts the sugars into alcohol and releases carbon dioxide, which saturates the wine naturally. Once the secondary alcoholic fermentation is complete, the wine is aged for about 6 months on the lees to produce autolysate tones.
A wine with a delicate, golden colour and an intense play of fine bubbles. Complex and bright aroma with notes of citrus, green apple and nectarine. Harmonious and complex taste with autolysate tones and well-integrated acids with a long and promising finish.

Thracian valley
In this region, which includes Southern Bulgaria, the climate is temperate continental protected from northern winds thanks to Stara Planina, with good rain distribution. It includes the central parts of the Thracian lowland and parts of Sakar. Most of the red grape varieties are concentrated in this area. Mavrud, Merlot, Cabernet Sauvignon, Red Muscat, Pamid and others are grown. The climatic conditions of the region favour the production of rich, dense, memorable red wines, especially from the varieties Cabernet Sauvignon and Mavrud. Good wines from the local variety Mavrud are especially valued for their aroma and taste of small red fruits, spices and herbs.

Семийон (Sémillon) е един от големите сортове грозде в Бордо, което се отглежда главно в района на Сен Емилион, в областта Бордо, откъдето очевидно идва и името му. В купажи със Совиньон блан той дава началото на едно от най-великите десертни вина в света - Сотерн, както и на различни бели вина от Бордо. Отглежда се и в някои райони на Южна Франция, където благодарение на способността си да дава пълни, но не много характерни вина, се използва като основа за сухи и сладки бели вина. Семийон е широко разпространен и в Австралия, както и в Южна Америка, особено в Чили и Аржентина. Отглежда се и в Северна Америка, особено в щатите по Западното крайбрежие, както и в Нова Зеландия, Източна Европа и Южна Африка, където през XIX-и век дори е бил най-разпространеният сорт в страната. Семийон има доста скромно киселинно съдържание, а доброто ниво на захар води до вина със средно до високо алкохолно съдържание, така че в топлите климатични зони се получават вина със забележима структура. Вината с отлично качество, произведени от чист Семийон, са по-скоро рядкост, като преобладава типичното купажиране на този сорт грозде със Совиньон блан.
